Strawberry Cake Mix Cookies

Simple, soft and cheap cookies! This is something I love to make when I'm in a bind and need something sweet at a moment's notice. You probably already have the ingredients in your pantry AND there are so many variations to it!

You only need 3 ingredients to make these!

1 box of strawberry cake mix (or any other flavor you have on hand)
2 eggs
1/3 cup of oil

That's it!!!

Mix all ingredients together and bake at 375 for 10-12 minutes.
Aren't they pretty? They even look soft! Perfection right here!!!

Okay, now let's think of all the variations we can make with these: lemon cake mix cookies, chocolate fudge, funfetti cake mix, RED VELVET cake mix cookies...I could go on and on! :)

  1. wow, those look yummy! do you follow the instructions on the cake box plus add the extra needed eggs and oil?! I think I might try these!

  2. Thanks for the comment! :) Nope, disregard the cake box instructions and just follow mine! You will LOVE them! Let me know how yours turn out. YUM! :)

  3. I make cake cookies with chocolate cake mix but I use a 1/2 cup of softened butter and mashed banana. Yum.

  4. This is so easy that I think I might even be able to swing this one!!! :) Thanks for posting!

  5. Yummy! Do you roll dough into cookie balls or do you just throw blobs on the cookie sheet?

  6. I roll into balls. I usually just use my pampered chef scoop.

    Good luck!!! :)

  7. These were great! I followed the directions then stirred in 1 cup of chocolate chips. Very quick and easy.

  8. Cute, easy recipe. Thanks!

  9. First time trying recipe. Made it for a pinterest party with my daughter. Very easy and yummy!!!

  10. How many cookies does this recipe make

    1. Goodness, I wish I could remember! Maybe a dozen depending on how big you make them?!!? You could put the little balls in a muffin pan, too.

  11. Making these now, with fresh strawberries chopped up in them.. Sprinkling powdered sugar on after they are done. Can't wait!

  12. Could you use applesauce in place of oil
